For those of you who know me well, you will know I am obsessed with ethical packaging. I hate anything made of plastic, especially is it not re-usable. So when I found this local delicacy in Thailand I loved it so much I thought it should be a must at the next summer wedding! Locally made coconut ice cream, served in the coconut shell! Genius, delicious and gorgeous!

PS: In thialand they served it with peanut, sweet corn, nata de coco and pumpkin toppings. Exotic and weird... but delicious.
